The ratio of of 2 3/4 total cups of flour, including crumbs, to a pound of butter, including the crumbs, seems like an awful lot of butter! I love all your recipes, but this seems a little too much. But, you apparently tested this? Just curious.

This looks delicious!!! I just had a quick question for you. In the recipe description for the crust you said that it’s 1.5X the original amount. But maybe my math is wrong, the butter seems to be more in this Apple Slab Pie recipe.

apple pie

1 3/4 cups + 2 tablespoons all-purpose flour
3/4 teaspoon salt
1 1/2 cups unsalted butter diced and cold
2-3 tablespoons ice water

orig crust x 1.5
3/4 cup unsalted butter diced and chilled
1.875 cups all-purpose flour
3/4 teaspoon salt
3-6 tablespoons ice water

Any help would be appreciated! Thank you!!

I don’t like crunchy apples in pie, so I partially cook them. If you like crunchy apples you can toss them with cinnamon sugar and skip that step.
