This Greek Pasta Salad recipe is the perfect easy dinner recipe and it’s perfect for a summer potluck. It’s a simple pasta salad with orzo and tons of Greek flavors – feta and briny olives with fresh veggies and a red wine vinaigrette. We absolutely love this recipe!

This salad has countless elements to it with so many flavors and textures all coming together in one large bowl. It is my favorite salad recipe to make and bring to pot lucks or any event where a salad is needed! Because of everything that goes into making it–everyone will like something from it!

I use an amazing from scratch vinaigrette on top which pulls everything together! Because it is a pasta salad, I chose Orzo. It is a small pasta, but goes in great with this salad because it is not overwhelming, and you still have a great pasta taste!

How to make Greek Pasta Salad

  1. Orzo Pasta: This small pasta resembles rice, but it’s pasta. I like how it makes the salad so simple. You can also use bowtie pasta or gluten-free pasta.
  2. Cook the pasta as directed on the package and drain, then cool. I like to add it to a bowl of ice water to stop the cooking and cool it faster.
  3. Romaine lettuce is best but you could also use spring mix or a combination of spinach and iceberg lettuce.
  4. Grape TomatoesRed OnionKalamata Olives, fresh Cucumbers are all classic Greek salad ingredients. You could also use cherry tomatoes or chopped fresh tomatoes or add green  bell pepper. I love using English cucumber but Persian cucumbers work too.
  5. Garbanzo Beans are also called chickpeas – this is a classic Greek salad ingredient and they add texture.
  6. Feta Cheese goes on top the salad and also in the dressing – giving delicious flavor.
  7. To make the simple dressing, add the fresh garlic, oil, and feta, red vinegar, and spices to a mason jar. Seal and shake to emulsify the dressing. The feta turns it into a creamy dressing without adding mayo.

How to Store Greek Salad

  • Store the salad in the refrigerator. If you want it to last a few days, don’t dress it until the day before.
  • Keep it covered and you can chill it with the dressing for about a day or two before it gets soggy.
  • Since there is no mayo in the dressing it’s perfect for a hot summer day.

Expert Tips + Variations

  • Add some chicken in if you’d like – you can use rotisserie chicken or shredded chicken that’s leftover.
  • Use any pasta shape you like, but we like the small orzo. Make sure to use al dente pasta so it doesn’t get soggy.
  • Swap out black olives or green olives if you want. You can also add kidney beans for a texture mix-up.
  • I love sliced raw onions in this orzo salad, but you can omit if they’re too strong for you.

Ingredients

For the salad:

This homemade easy pasta sauce is a classic recipe and it is almost as easy as opening a jar of marinara sauce! I constantly find myself using this recipe on pasta recipes, for pizza sauce, to dip breadsticks in, or as a meat sauce!

My secret to the perfect pasta sauce: I always add a bit of honey into my sauce to counter the acidity of the tomatoes – it makes all the difference.

Can you make a homemade spaghetti sauce recipe in 30 minutes? Yes you can – this one is the perfect recipe for an easy weeknight meal.

How to make Easy Pasta Sauce

  1. Always sauté a diced yellow onion in some extra virgin olive oil and add minced garlic when the onion starts to get translucent. These make your sauce taste like it cooked all day.
  2. Use good quality Crushed Canned Tomatoes, like San Marzano Tomatoes, a really good brand of plum tomatoes. These will add the perfect tomato flavor.
  3. Chicken Stock makes it taste like it slow cooked all day.
  4. Honey adds a touch of sweetness that balances out the acidity! My all-day tomato sauce recipe uses carrots for natural sweetness but this cooks too fast for that.
  5. I always add salt and pepper, Italian seasoning, and red pepper flakes! You can also add dried oregano or use fresh herbs, like fresh basil and fresh parsley.

  • Many people will make sauces with fresh tomatoes, but using canned crushed tomatoes is just so much easier and taste great because they are canned at their peak.

Ingredients

  • 1 tablespoon olive oil
  • ½ medium onion diced
  • 2-3 cloves garlic minced
  • 28 ounce can (794g) crushed tomatoes
  • 8 ounce can (227g) tomato sauce
  • 1 cup (237ml) chicken stock
  • 1 tablespoon (21g) honey
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon Italian Seasoning
  • ¼ teaspoon red pepper flakes

Instructions

  • Add olive oil to a large frying pan (3 quart or larger saucepan can also be used). Heat over medium-high heat. Add the onion and cook 2 minutes, then add garlic and cook 1 minute more.
  • Add the crushed tomatoes, tomato sauce, and chicken stock. Stir.
  • Add the honey and spices to the tomato sauce, stir to combine. Bring to a boil, lower the temperature to medium-low and simmer for 15 minutes.
  • Add additional salt and pepper to taste. Serve over pasta.
  • Store in an airtight container for up to 3 days or freeze for up to one month.

Easy salad recipes are the best in summer and this Corn Pasta Salad is one of my favorites. Made with tortellini, corn and lots of grilled veggies, this simple pasta salad has a homemade Italian vinaigrette.

Similar to my Pesto Pasta Salad and my Pizza Pasta Salad, I used cheese tortellini in this recipe – I love tortellini in pasta salads! I find that tortellini are perfect for pasta salad recipes because they’re a little heartier than regular pasta. If my pasta salad doesn’t have protein in it, then adding some tortellini adds a little more heft to the salad.

There are so many ways to make this recipe and you can definitely change it up to suit what you like. A pasta salad with cherry tomatoes and corn and lots of roasted vegetables is the perfect recipe for summer: they feed a crowd so they’re perfect for a potluck, you can make them ahead of time so you’re not slaving over the stove, and you can use lots of fresh produce that’s in season.

How to make Corn Pasta Salad

  1. Cheese Tortellini (or any flavor) – make sure to cook it a little al dente so it doesn’t get soggy.
  2. I used frozen corn in this corn pasta salad but you can use fresh corn if you want. You’ll need about 4 ears of corn, hulled and cooked then removed from the cob.
  3. Lightly grilled zucchini and yellow squash, diced: Grilled zucchini and yellow squash give this salad a great crunch and flavor. I love grilled vegetables!
  4. Red bell pepper: Whenever I think about corn I also think about bell peppers and squash, so that’s what I included in this salad.
  5. Cherry tomatoes are great for color, but you can omit them.
  6. I make a homemade mustard dressing, but you can use any bottled dressing you enjoy.

Easy dressing for Corn Pasta Salad

Making your own homemade salad dressing is super easy and I love making my own for pasta salads. If you want to make this a semi-homemade salad, feel free to pick up any of your favorite dressings at the store. I think a pasta salad with corn and mayo dressing would be popular but I decided to use an Italian dressing with mustard.

Be sure to dice your shallot small and press or mince your garlic for the dressing. Add all the ingredients to a jar and shake to emulsify. I love using white balsamic vinegar and dijon mustard, but you can use white wine vinegar, regular balsamic, and any kind of mustard you enjoy.

Storing Pasta Salad

Pasta salad is great for making ahead of time – it needs to sit and have all the flavors marry, plus it needs to chill so it’s cold when you serve it. Store in an airtight container in the fridge – it’ll stay good for 3-4 days as long as the tortellini is cooked al dente.

Corn Pasta Salad

This Corn Pasta Salad is an easy tortellini salad with corn and roasted vegetables tossed with a simple vinaigrette with mustard.

Ingredients

  • 1 package (about 19 ounces) cheese tortellini see note
  • 1 medium zucchini sliced
  • 1 medium yellow squash sliced
  • 2 cups frozen corn thawed
  • 1 cup grape tomatoes diced
  • 1 red pepper diced

Dressing:

  • 1 tablespoon diced shallot
  • 1 clove garlic minced or pressed
  • 1 tablespoon dijon mustard
  • cup white balsamic vinegar
  • ¾ cup olive oil
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • ¼ teaspoon Italian seasoning

Instructions

  • Cook tortelllini according to pacakge directions. Drain and cool.
  • While you're cooking the tortellini, heat a griddle to medium high heat. Spray with nonstick cooking spray. Grill the zucchini and squash about 3-5 minutes per side (depending on thickness). Cool then dice.
  • Mix together tortelllini, diced squash and zucchini, diced bell pepper, tomatoes and corn.
  • Place all dressing ingredinets in a mason jar. Cover and shake until emulsified. Pour over salad. Toss to coat.
  • Chill and serve within 2 days.

Notes

Use any flavor tortellini, fresh or frozen.

Pesto Tortellini Pasta Salad is the perfect simple dinner or potluck dish! It’s like a pasta salad but made with cheese tortellini, basil pesto, sun-dried tomatoes and pine nuts! It’s a hearty pesto pasta salad that I can never stop eating.

I think I could live on tortellini…especially with my homemade pesto! Making a Tortellini Salad with pesto is SO simple – it’s done in less than 30 minutes. I make this every time I have a party and sometimes I just keep it in the fridge for quick lunches or dinners all summer long.

I love to use tortellini in pasta salads. It adds texture, flavor and if you use cheese tortellini it makes this dish a great vegetarian side dish for parties. In fact, if I had to choose, I think I could go without all other pasta and just live on tortellini!

Ingredient Notes

  • Tortellini – Use your favorite brand, fresh tortellini or frozen. I’ll usually use whatever is on sale. The only difference between fresh and frozen tortellini is the cook time.
  • Toppings – I add chopped sun-dried tomatoes (drain the oil), pine nuts, and sometimes I’ll add thawed frozen peas. You could also add rotisserie chicken (or leftover chicken breasts) to give it more protein. Add artichoke hearts or anything else you love!
  • You’ll need Pesto, of course. Use a jar or make my homemade pesto recipe.

Tortellini Salad with Pesto Tips

  1. Follow the package directions when cooking the pasta (every brand is different).
  2. Let the tortellini cool before making the salad. I’ll often add it to a bowl of ice water or run cold water on it to stop it from cooking after it’s done.
  3. I always add freshly grated parmesan to the salad. You can use pre-shredded, but don’t use the grated kind from the can.
  4. Add all the ingredients and toss to combine. That’s it!

How long does this salad last?

I like a cold pesto pasta salad, so I usually make it at least an hour in advance before serving it. Once I pull it out of the fridge, I just give it a few tosses and then it’s ready to serve.

I think it tastes better when it’s had a chance to sit in the fridge. It allows all of the flavors to develop. You can make it up to a day in advance and the leftovers will keep well for two to three days. If it dries out you can always add a little more pesto before you serve it.

  • 1 19 ounce bag frozen cheese tortellini

Instructions

  • Cook tortellini according to package directions. During the last 2 minutes of cooking time add the frozen peas to heat them up. Drain well.

Gone are the days when you have to stick to your kitchen for hours to stir and taste: set this and forget it. When you come home after this has been cooking all day you’ll feel like you’re in an Italian restaurant!

Ingredients Needed

  • Celery, Onion, Carrot: I use these as a vegetable base for my sauce.
  • Garlic: REQUIRED! I love tons of fresh garlic in spaghetti sauce.
  • Crushed Tomatoes: Use a good quality brand, like Hunt’s or San Marzano. I also add tomato paste.
  • Honey: A little sweetness helps cut the acidity of the tomatoes.
  • Chicken Stock: This makes the flavor taste so deep, but you can also use water or vegetable stock or even beef stock.
  • Spices: Gotta add tons of spice! I usually add salt, pepper, basil, oregano, thyme, and red pepper flake.

How to make Crockpot Spaghetti Sauce

  1. Vegetables: I start my sauce with carrots, onions, celery, and garlic. I chop them small in a food processor so the sauce is fine and not chunky. Prepare the size of the vegetables as you wish, but a food processor or blender helps you chop them quickly.
  2. Dump: Once the vegetables are soft, add them to a crockpot along with diced tomatoes, chicken stock, tomato paste, and lots of herbs and spices. I also follow the advice of my dad and “add a little honey” for sweetness.
  3. The Slow Cooker Spaghetti Sauce cooks all day and is perfect for serving with pasta, chicken marinara, or freezing in jars.
  4. Can you make this a meat sauce? To make homemade spaghetti sauce with Italian sausage or ground beef, you’ll want to cook the meat first and drain the fat. You can add it to the crockpot with all the other ingredients or leave it plain and add meat as desired when serving.

Storing Crockpot Spaghetti Sauce

  • Store the sauce in an airtight container in the fridge for up to 3 days.
  • You can freeze it for several months. I recommend freezing it in jars or plastic containers – or use Souper Cubes, which we absolutely love for storing. That way I can grab just a specific amount for whatever dinner I’m making.

Expert Tips

  • Use fire-roasted cans of tomato sauce for even more flavor! Regardless of what kind of diced tomatoes you use, be sure to use a GOOD brand. I buy store brands for lots of things, but not tomato sauce. I like Contadina, Hunt’s, or San Marzano for this recipe.
  • Likewise, be sure to buy good chicken stock, not broth. Use Trader Joe’s, O Organics, or Kitchen Basics (those are my favorites).
  • I use dried herbs in this spaghetti sauce; the long cooking time can be rough on fresh herbs.
  • Be sure to taste for salt/pepper towards the end of cooking. I don’t like adding a ton of salt so if you need to add some, go ahead.
  • Don’t have honey? Use agave or maple syrup instead, or even a few teaspoons of sugar.

This pasta salad is super easy to make. The sauce of this salad brings in a bit of spice with red pepper flakes. All of the pasta elements are inspired by an Arrabbiata Style, which is a tomato based sauce that packs a spicy punch from the addition of dried red chili flakes. I love that this salad recipe doesn’t have any mayonnaise – that makes it perfect for a pot luck.

Pasta salads are so great because you can customize them for yourself. You can add anything you want: black olives, artichoke hearts, chicken, bell peppers, and salami are all great ingredients that would also taste great in this salad.   • Add the pasta, tomatoes, spinach, mozzarella, and shallot to a large mixing bowl.
  • Make the dressing: add the sun-dried tomatoes (with their oil) to a food processor or blender. Add the garlic, 1 teaspoon red pepper flakes and 1/2 teaspoon salt. Pulse until sundered tomatoes are finely chopped, then run the food processor or blender while adding the olive oil. Run until a thick sauce forms. Taste, then add more pepper flakes and/or salt to taste.

Easy Baked Penne Pasta – this easy pasta casserole is FULL of cheese! It’s accidentally vegetarian and no one will know it’s semi-homemade! This is one of the best easy baked pasta recipe I’ve ever made.

Years ago I had a friend who introduced me to this easy baked pasta recipe. She made it for a 4th of July barbecue one time and we sat eating it for hours. I’ve been making it for potlucks and family dinners ever since.

When I researched baked penne pasta recipes online before making it, I found that so many of them have meat in them. I thought that was strange, because I’ve only ever had THIS Baked Penne, which is vegetarian. My friend didn’t eat meat, so neither did her pasta recipe. As a result, I’ve always made this without meat. And you know what? I don’t miss the meat at all – plus I often serve it with a side of baked or grilled chicken or some meatballs for protein. After all, it makes a HUGE batch, so we’re often eating it at a potluck.

The recipe is easy, using just a handful of ingredients, and comes together in minutes. Plus, do you see how cheesy this baked penne is??? OMG.

Baked Penne Pasta Secret Ingredients

There are two secret ingredients in this baked penne pasta. Can you guess what they are? They’re two things I’d never seen in a pasta recipe before, but they make the end result so cheesy and creamy I just never leave them out. They might seem strange but now I use them in recipes like Cheesy Egg Casserole.

  • The cottage cheese adds body (and protein) to the dish. You don’t taste it at all, plus it makes it even more cheesy. There’s TONS of mozzarella to make you forget about the cottage cheese, but this dish wouldn’t be as good without it.
  • Sour cream adds so much creaminess to this easy baked penne recipe. This result is almost like a creamy tomato sauce.
  • What other ingredients are there? Just pasta, spaghetti sauce, and garlic. You can use any jarred pasta sauce you like (I’ve used a variety of brands). OR, you can make your own red sauce.
  • I always kick it up by adding TONS (5 cloves) of pressed garlic. If you’re not a garlic lover, you can leave that out, but it gives a wonderful flavor to the dish. (Plus, it wards off vampires.) Then you add tons of cheese and bake it up.

How to Make Easy Baked Penne

  1. Boil the pasta in a large pot over medium heat until al dente. It will finish baking in the oven.
  2. Stir together the marinara sauce, cheeses, and garlic then stir in the pasta and more cheese.
  3. Bake until bubbly and golden.

Expert Tips

  • If you want to add some meat you can use cooked ground turkey, ground beef, Italian sausage, or leftover cooked chicken.
  • Turn this into baked ziti by using ziti shaped pasta.
  • You can also sprinkle parmesan cheese on top along with the mozzarella.

The day I made this dinner I was texting with a friend about how frustrating it is to make dinner. She joked that in the morning she has all the intention to make a nice meal and by the time 4:00 rolls around it’s cereal again because the chicken is usually still frozen or she’s too tired to cook. I totally agreed with her; making dinner is exhausting.

That’s why, about this time of year, I break out my crockpot and just leave it on the counter. After a long day of work the last thing I want to do is cook dinner. If the slow cooker is out it will remind me to set it and forget it and dinner is ready when we are!

The key to making a delicious chicken recipe in the slow cooker is adding a lot of flavor. I love to do this by adding sauce to my crockpot instead of just cooking the chicken plain or with herbs. One, the sauce lends flavor into the chicken and two, it keeps it nice and moist.

5 Ingredient Chicken Marinara

The main ingredients are a jar of marinara sauce and boneless skinless chicken breasts. Since we’re starting with a jarred sauce, I like to doctor it up a little, so I added spices: red pepper flakes, Italian Seasoning, and Garlic Salt.

This chicken marinara recipe is made even easier because it’s semi-homemade, but with good ingredients. That’s the key when you’re starting with prepared food: make sure it’s good quality. The better the products are, the better the end result will be.

Using Frozen Chicken

I’m not going to lie: I forget all the time. While it’s not recommended to cook frozen chicken breasts in a slow cooker, it can be done but you have to make sure it’s fully cooked. Frozen breasts (that aren’t stuck together) will take at least 4 hours (or more) on high. Do NOT stop cooking until the chicken is no longer pink and the temperature should be 165°F if you’re checking with an instant read thermometer.

How to make Chicken Marinara

  • Stir together the sauce and spices. Pour the sauce in a slow cooker (I like using a slow cooker liner for easy cleanup).
  • Just add the chicken and cook on high until it’s done.
  • Shred the chicken with two forks and serve with penne or spaghetti, rice, or a vegetable like broccoli or asparagus. Top with mozzarella cheese or parmesan and some fresh basil or fresh herbs.

How long to cook chicken in the crock pot

Thawed and boneless chicken breasts take about 2-4 hours on HIGH in a crockpot. I always check the chicken after about 2 1/2 hours to see if it’s cooked through. Chicken cooked too long gets dry, so be sure not to overcook.

How do I make my crockpot chicken stay moist?

That’s what this recipe is great for: Crockpot Chicken Marinara is super flavorful because the chicken absorbs all the flavor of the marinara as it cooks. This is the perfect chicken to serve over pasta!

One pot meals are a staple at our house, and this easy chicken and broccoli skillet is in our permanent dinner rotation. It’s family-friendly and an easy 30 minute meal!

It’s like a cross between a chicken and broccoli stir fry, chicken and broccoli casserole, and a creamy pasta dish. The flavors are amazing – savory, comforting, and delicious. It’s one of those meals you throw together last minute with what you have in your pantry and fridge.

It’s basically an all-year dinner for us – during the fall and winter, it’s so cozy, and it’s great during the spring and summer when we have so many kid activities going on. Picky eaters love this too – and it’s a one pot dish. I’ve made this chicken broccoli 30 minute meal so many times I’ve lost count!

Ingredients Needed

  • Pasta: I love using whole wheat egg noodles but you can use your favorite shape and kind of pasta.
  • Broccoli: Cut the florets off the stalk and into bite size pieces.
  • Yellow Onion: Dice it small
  • Garlic: Mince it or use a paste
  • Cream of Mushroom Soup: This makes the sauce
  • Milk: I used nonfat milk but you can use nondairy or water or chicken stock
  • Cheese: It’s so good with some shredded parmesan cheese
  • Chicken: I use already cooked chicken. This is great for using leftover chicken if you meal prep shredded chicken like I do, or if you have a rotisserie chicken.

How to Make Easy Chicken and Broccoli Skillet

  1. Bring water to a boil in a large pan or skillet. Cook the noodles following the package instructions. When there are three minutes of cooking time left to go, add the broccoli florets and boil them with the noodles. Drain them and set them aside.
  2. Heat the oil in the same pan. Add the onion and garlic and cook them until the onions are softened and translucent.
  3. Add the soup, milk, cheese, and pepper. Stir to combine and then mix in the cooked chicken. Once the chicken is heated, add the cooked noodles and broccoli. Stir well to coat everything in the sauce. Top each serving with more Parmesan cheese.

Easy Substitutions

Pasta: Instead of egg noodles, you can make this one pot chicken broccoli dinner with any kind of pasta shape. So, use what you have on hand!

Soup: Instead of mushroom soup, try cream of potato soup or cream of chicken soup to change the flavor.

Notes

  1. I used Campbell’s Healthy Request condensed soup, use what you prefer. You can also use cream of chicken or cream of potato soup in place of the cream of mushroom.
  2. You can also use rotisserie chicken in this recipe in place of my instant pot shredded chicken.
  3. If you are using FRESH chicken that is not already cooked: dice chicken into small bite sized pieces. After the noodles and broccoli have been removed from the pan, add 1 tablespoon olive oil to the pan. Add the chicken and cook, searing on both sides, for about 5-10 minutes (depending on size of chicken pieces) then remove to a plate. You want the chicken almost cooked at that point. Continue the recipe to make the sauce then return the chicken and any accumulated juices to the pan and let finish cooking in the sauce.

Easy BBQ Chicken Pasta Salad

A plain pasta salad can be boring and bland until you try this simple chicken pasta salad recipe. It’s your favorite vegetables, pasta and cooked chicken glazed in an incredible homemade barbecue dressing for an explosion of flavors. 

Don’t worry, this BBQ salad dressing only took a few seconds to make. I just added some onion, garlic, spices, vinegar, citrus, and oil and the result is a thick dressing that tastes like a BBQ chip! You could even opt for a store bought barbecue vinaigrette but I prefer the homemade version since it’s fresh and free of any extras.

Ingredients Needed

  • Pasta: I’m using Rotini Pasta cooked and drained according to package directions but any posta shape works
  • Corn: kernels frozen and thawed or fresh or cut off a cooked cob
  • Chicken: Use rotisserie chicken or make pulled spicy chicken – or you can even use my instant pot shredded chicken
  • Cilantro: I love adding cilantro to most dishes since it smells delicious and adds so much flavor! But if you’re not a cilantro lover, leave it out, or use Italian parsley. 
  • Barbecue sauce: you can’t complete this pasta salad dressing without the BBQ sauce. Your favorite BBQ sauce works best in this recipe. I’ve also made this with sugar-free barbecue sauce and it was delicious! 
  • Onion: a finely diced red onion
  • Garlic: you can use either garlic paste or 1 garlic clove that’s crushed
  • Paprika: smoked paprika makes all the difference in this dressing. Don’t skip this one
  • Vinegar: red wine vinegar is an essential ingredient to make barbecue vinaigrette
  • Oil: Olive oil to give our salad dressing some texture

How to make chicken pasta salad

  1. Stir together cooled pasta, onion, corn, tomatoes, chicken, and cilantro in a large bowl.
  2. Make the dressing: add all dressing ingredients to a jar or sealed container. Seal and shake well to combine. 
  3. Pour dressing over pasta salad and toss to combine.
  4. Serve and enjoy!

For the salad:

  • ½ lb. Rotini Pasta cooked and drained according to package directions
  • ¾ cup red onion diced
  • 1 cup corn kernels frozen and thawed or fresh, cut off a cooked cob
  • 1 cup halved grape or cherry tomatoes
  • 2 cups shredded chicken I used rotisserie
  • 2 tablespoons cilantro or to taste
  • BBQ sauce dressing recipe follows

For the dressing:

  • ¼ cup your favorite barbecue sauce
  • ½ teaspoon finely diced red onion
