Easy to make and very tasty…..I added a little water so that it wouldn’t be on the dry side…..

I don’t usually but you can add a little bit if your casserole dried out too much.

I made the chicken & rice casserole. I found it a bit dry. I added the tin of soup but I did not add any water. Should I have added a tin of water?

What a nice thing to do! Yes bake then cool completely then freeze unless she has an oven and can bake them herself. Either way, this one is perfect because it’s basically just heating everything together. She can even bake from frozen it just will take a bit longer.

Hi, Dorothy. Putting together some pre-made casseroles with pasta, placing them in casserole tins, and freezing them for our daughter to take to college. Love this rice recipe. If we freeze this one for her, should I bake until done, then freeze? Or freeze the ingredients and bake when she defrosts? Thanks for the recipe!!!

I recently made this, but was lazy & used uncooked brown basmati rice & 2.5 cups chicken broth. Baked 30 min without the chicken, then stirred in the chicken & baked 1 hr more. Turned out perfect!
Made a 2nd batch in a foil pan which I froze for an easy post-surgery meal. My husband just reheated the frozen & thawed one last night. 350° for 1 hr. It was even better!

I made this for dinner tonight. I added finely chopped onion, sweet pepper and celery and omitted the peas but everything else was exactly like the recipe. It was delicious and will definitely make again.
