I have made these quite a few times and they are fantastic! My kids hate zucchini and I always harvest a ton grown in my garden, so this is a great way to use them up and my kids love these brownies! Win-Win!

i’ve made 10+ batches of zucchini muffins this year and i WASTED MY TIME because i should have been making these brownies instead. genuinely the best thing i’ve made in a loooong time and it’s a beginner friendly recipe which is a plus.

Yes – with the frosting you’ll want to place them in a single layer. You can also freeze them in a single layer on a cookie sheet for about an hour, then stack them between layers of parchment or wax paper and freeze in an airtight container (separate before thawing).

I did end up using a smaller pan as the better seemed a little thin. The texture, however, was just as described. Would be delicious with a scoop of vanilla ice cream! Agree it’s all about the zucchini and moisture level. Can’t wait to try one of the other zucchini recipes!
